Before she was Belly of the Beast’s Founding Ambassador and Brewster, Dani spent most of her time talking to strangers about food. A graduate of Trent University’s Sustainable Agriculture and Food Systems program, Dani is a familiar face in Peterborough’s vibrant foodie community, whether enthusiastically peddling the wares of a local chocolatier at the Peterborough Farmers Market, or providing sparkling customer service at a natural health food store. Her enthusiasm for the local food scene saw her forming and facilitating relationships with many Peterborough-area farmers and restauranteurs, and she carried this collaborative spirit forward when she founded Belly of the Beast.
Established in 2016, Belly of the Beast Craft Kombucha was born out of Dani’s passion for combining flavours in bold and unexpected ways. With a particular focus on local, seasonal, and organic sourcing, Belly of the Beast aims to change the way you think of kombucha: not just something you’re told you should drink for your health, but a refreshing, flavourful, and downright celebratory beverage you enjoy for its taste. Since Dani first started brewing kombucha out of the kitchen of Amusé Coffee Co., Belly of the Beast has gone on to brew dozens of different flavours, and in February 2017 expanded operations to its very own production space: The Belly of the Beast Boochery & Taproom at 322 Charlotte Street.
